Tailgating Food Recipe Ideas

Football season is well under way and it’s that time of year when tasty food is enjoyed in parking lots across America. Whipping up new and original tailgating recipes can be a challenge since you won’t be serving up your dishes at home. Hearty salads are always a great idea because they can be served cold and will transport well to the stadium in a cooler. Here is a delicious recipe for grilled potato and avocado salad- the perfect autumn dish as the grilled potatoes and avocado hint at both summer and winter flavors.
Potato & Avocado Salad
Ingredients
1.5 lbs. of potatoes, cut into 1/2-inch chunks
2 medium red bell peppers, cut into 1/2-inch pieces
1/4 cup Mayonnaise
1 medium avocado, diced
2 Tbsp. chopped fresh cilantro
1 medium red onion, cut into 1/2-inch pieces
1/2 cup Italian Garlic Steak Marinade With Roasted Garlic & Olive Oil
1 tsp. Seasoned Salt
1 tsp. Seasoned Pepper
Preparation
1. In a large bowl, toss the cubed potatoes, vegetables, marinade, salt and pepper. In the center of one of the sheets of (18 x 24-inch pieces) heavy-duty aluminum foil, arrange potato mixture. Wrap the foil loosely around potatoes and vegetables, sealing thoroughly with a double fold. Grill, turning occasionally, for about 45 minutes or until the cubed potatoes are tender. Let the potato mixture cool a bit.
2. In a large tupperware bowl, toss potato mixture with mayonnaise, then gently stir in avocado and cilantro. Cover and bring to the stadium!
Serve the salad warm or at room temperature.
